Gnocchi Sausage Shrimp Soup

This is quick and easy, and really fricken good. It does ask you to open a can of tomato paste for 2 T, so pizza or spaghetti is in your future.  A one pot meal that is incredible.

Ingredients

  • 1 lb Italian sausage (mild)

  • 1 lb shrimp

  • 1 lb gnocchi

  • 1 Cup halved cherry tomatoes

  • 1 Cup Spinach

  • ¾ Cup Parmesan

  • ¼ Cup Sundried Tomatoes

  • 4 Cups Chicken Broth

  • 1 Cup heavy whipping cream

  • 2 medium shallots chopped

  • 2 t B&G

  • 1 t smoked paprika

  • 2 t Italian seasoning

  • 2 T chopped garlic

  • 2 T Tomato Paste

  • 2 T Olive Oil

  • ¼ t red pepper flakes

 

In a large pot, on medium heat, add olive oil, garlic, Italian seasoning, and red pepper flakes.  Infuse the oil and start to brown the garlic

Add the Italian sausage, cook about ¾ of the way

Add the shallots.  Stir for 3 minutes

Add chicken broth, paprika, tomato paste, and B&G

Add the heavy whipping cream and bring it to a simmer

Add the Cherry tomatoes and parmesan cheese. Stir until creamy.

Add the gnocchi, spinach, and shrimp.  Stir until the shrimp is cooked.

Optionally, dress it up with parsley flakes
