Honey Balsamic Chicken

Very quick and easy, especially if you have left-over rice/quinoa!

Ingredients

  • 2 chicken breasts

  • 4T Garlic olive oil

  • B&G to taste

  • 1/3 cup balsamic vinegar

  • 2 T  honey

  • 4 cloves garlic, minced

  • 1 cup orzo pasta/Quinoa/rice

  • 2 cups chicken broth

  • 3 cups fresh spinach

  • 1/2 cup feta cheese, crumbled

  • 1/2 tsp Italian Seasoning

Instructions

Start Cook quinoa/rice with chicken broth in rice maker (if you do not have left-overs)

Wilt Spinach with 2 T garlic olive oil. Microwave 3 minutes

Season chicken with B&G. Heat 2 T Garlic olive oil in a skillet over medium heat and sear chicken for 5–6 minutes per side until golden and cooked through.

Remove chicken and set aside. In the same skillet, add garlic, balsamic vinegar, and honey. Simmer until slightly thickened. ~ 4 minutes

Return chicken to the skillet and coat with balsamic glaze. 

Serve glazed chicken over orzo, top with spinach and feta
