Jerked Coconut Shrimp
Surprisingly simple recipe made me wonder why we had not done this before. You will need three bowls, shrimp, and a fry pan with oil, or better yet, coconut oil.
Bowl one - the dredge
1/2 cup flour
Bowl two - Egg wash
2 Eggs Scrambled
1/4 cup water
Bowl Three - The coating
1 cup Panko
1 cup coconut flakes
1/4 cup B&Gerk
Heat a fry pan with oil covering the bottom, maybe 1/16th of a inch. In the large cast iron skillet, it was 2 cups coconut oil. Heated to medium low heat.
Dredge the shrimp in Bowl 1, covering them completely.
Dip the shrimp in Bowl 2 egg was covering the shrimp
Coat the shrimp in Bowl 3, giving a little squeeze to get more coating on them
Place in the pan, cook until the coating is golden brown, then flip. about 2-3 minutes per side.
Remove and Serve
