Lobster Tacos

This is a work in progress. This recipe is extremely quick, but for me, it needs something more. It has been tried with left-over, precooked Lobster or Langostino, which accounts for it’s quick and easy cooking. Here is the current recipe

Ingredients

  • ~ 12 oz Precooked lobster or Langostino

  • 2 tomatoes fine chopped

  • ½ purple onion fine chop

  • I red pepper small chop

  • ¼ cup white wine

  • 1/8 teaspoon chicken boullon

  • ¼ t red pepper flakes

  • 1/8 t cayenne pepper

  • 1 t sugar

  • ¼ t smoked paprika

  • 2 T garlic olive oil

  • ¼ c shredded cheese (tried Cojack, may go to a Swiss or sharp cheddar)

  • 2 Cups chopped spinach

  • 2 T B&Gerk

  • Tortillas

Marinate lobster in 2T of B&Gerk

Add 2 T of garlic olive oil to a large skillet.  On Medium High heat, add red pepper and cayenne

Add tomatoes, stir in for ~ 2min

Add chicken bouillon

Add Sugar

Add red pepper and onion, mix in for 2 min

Add lobster and spinach, mix in for ~ 2 min

Add white wine

Add cheese, mix in for ~ 2min

Server on tortilla of choice!
