Brandy’s Fontina Stuffed Chicken
Or Brandy’s Cordon Who?  
The Flavors in this were too incredible not to get in writing!
As is, this was wonderful beyond words.  We are going to be doing some experimentation around this recipe.  Options discussed to follow
Base Ingredients
- Chicken Breast 
- Sliced Ham 
Stuffing Ingredients
- 1.5 Cups grated Fontina 
- 2 T Ricotta 
- 2 T Sour Cream 
- 1 T chopped fresh sage 
- 1 T chopped fresh rosemary 
- 1 T chopped fresh garlic 
- 1 T Chives 
- 2 t B&G 
- 2 t B&Gerk 
- ½ sweet onion sautéed 
 Filet Chicken Breast, pound flat- Encapsulate stuffing in ham so it does not run away in the oven - Roll and Pin if necessary to hold shape - Top with B&Gerk - Bake in oven for ~25 minutes - For the last 7 or so minutes, top with ½ cup fontina to brown up - When removed from oven, sprinkle on some chives. Slice and Serve! 
 
 Some options we talked about- Stuffing: - · More ricotta to help hold shape - · Instead of listed stuffing, just seasoned ricotta (with seasoning listed. Use the fontina and the same ingredients to make a cream sauce to pour over it. That would take about 1 cup ½ and ½ . - · Do the above, but use chucked crisp bacon instead of ham - Looking forward to playing with this one!
