Coconut Mango Chicken Lettuce Wraps

A very quick and ligh meal!

Coconut Mango Chicken Lettuce Wraps

Ingredients:

  • 2 chicken breasts diced

  • Small onion chopped

  • 1 T B&Gerk

  • 1 Mango diced or Grilled pineapple chutney

  • 3 T olive oil/Garlic olive oil

  • ½  cup coconut milk

  • Zest from 1 lime

  • Juice from 1 lime

  • 2 T Chopped Garlic

  • 1 t grated ginger

  • 1/4 t red pepper flakes

  • B&G to taste

  • large lettuce leaves

  • ¼  cup chopped fresh cilantro

  • ¼ cup green onion

  • ¼  cup shredded coconut (unsweetened)

  • Black refried beans

  • Lime wedges for serving

    Instructions:

    Marinate Chicken 1 T olive oil and B&Gerk

    Heat olive oil in a pan over medium heat with red pepper flakes. Sautee onions. Add the diced chicken and season with B&G. Cook for ~8 minutes until the chicken is golden and cooked through.

    Stir in the coconut milk, lime juice, lime zest,  grated ginger, mango if used, and minced garlic. Simmer for ~4 minutes until the sauce thickens slightly.

    Remove from heat. Sprinkle green onions and coconut over the chicken

    Build the lettuce wrap with Black beans, a scoop of the chicken, and pineapple chutney if used.
