Jerked Shrimp Avocado Bowls

We did this on a bed of rice cooked with chicken broth and onions.  The was a suggestion for quinoa and kale as an alternative.  Another suggestion that a feta Greek yogurt dressing would be a bonus as well.  It was really good by itself.  Some options to change it up

 Ingredients:

  • 1 lb cooked shrimp, peeled and deveined

  • 2 T B&Gerk

  • 2 ripe avocados diced

  • 1 cup halved cherry tomatoes

  • ½ red onion fine diced

  • ¼ cup chopped fresh parsley

  • 2 T chopped fresh cilantro

  • 2 T olive oil

  • 1 T lime juice

  • 1 t garlic powder

  • ½ t paprika

  • 1 t B&G

  • Sprinkle of cayenne

Put the shrimp in a bowl, coat with B&Gerk

In a large bowl, put everything else.  Fold all the ingredients together.

Cook the shrimp in a large pan.  When they are cooked, add them to the large bowl, fold them in.
