Scallop Tacos with Mango Slaw

This is a very quick meal to prepare.  I think sides and tortillas take longer to get ready.

 Ingredients

  • 1 lb small scallops

  • ½ onion large chop

  • 2 T B&Gerk

  • 1 T Garlic olive oil

Slaw Ingredients

  • 2 cups sliced red cabbage

  • 1 cup mayo or Greek yogurt

  • 1 T apple cider vinegar

  • 1 T lime juice

  • 1 T Honey

  • 4 T Sriracha sauce

  • 1 T B&G

  • 4 green onions chopped

  • 2 T garlic

  • ½ cup chopped cilantro

  • 2 cups chopped mango

Pat dry the scallops.  Cover with B&Gerk, then set aside

In a large bowl, mix together the mayo, vinegar, lime juice, honey, sriracha, B&G, green onions, garlic and cilantro.  Fold in cabbage and mango.  Place the bowl in the refrigerator while finishing the recipe and sides

In a hot skillet on high or medium high, add olive oil, and onions.  Sautee them for a few minutes.  Add scallops.  Turn every couple of minutes until cooked, ~5 min.

An interesting note. I had black refried beans as a side.  Everyone at the table used them inside their taco instead of as a side.
