Pear and Porkchops

This surprisingly simple meal has incredible flavor, and an instant family hit! Something new and wonderful!

Ingredients 

  • 4  pork chops

  • B&Gerk to taste

  • ½ Cup flour

  • 2T Garlic olive oil

  • 2 T apple cider vinegar

  • 3 T brown sugar

  • 2T Honey

  • 3 T roughly chopped fresh rosemary

  • 1 cup Chicken or vegetable broth

  • 2 T freshly grated ginger or pickled ginger

  • 1 ripe pear, ½ chopped, ½ thin sliced lengthwise

  • 1/2 sweet yellow onion, cut into wedges

  • 1 T corn starch

  • 2 T cold water

Instructions 

Whisk the apple cider vinegar and brown sugar together in a small bowl, Set aside.

Dredge the pork chops in flour.  Sprinkle B&Gerk on the pork chops

In a large cast iron pan, heat the oil over medium heat. Cook the pork chops ~ 4mins per side.   Remove them and set aside in a deep serving dish

Slowly add the vinegar mixture and honey to the pan. Stir it until the sugar dissolves and the mixture thickens into a bit of an amber syrup. ~ 10-20 seconds.

Stir the chicken broth into the pan and bring it to a simmer. Add the sliced pears, onions, and ginger. Stir for ~ 5 minutes.

Whisk the corn starch and cold water together in a small bowl until the corn starch is fully dissolved. Slowly stir it into the simmering sauce and keep stirring until the sauce has thickened. Add rosemary for about 1 min.  Bring the heat down to low and transfer the chops back to the pan.

Spoon the sauce, pears, and onions over the pork chops and serve!
