Shrimp Lettuce Wraps

This Mediterranean inspired meal can be done in 20 minutes.  The Sriracha Lime  sauce added some nice flavor.  Finding the right lettuce for wrapping has been a challenge.  I tried some bib lettuce like Mom used to use in the 70s for what now is served as PF Chang’s Lettuce Wraps.  The bob lettuce tore to easily.  I will try some romaine next time.

 Ingredients:

  • 1 lb shrimp

  • Large cleaned lettuce leaves

Avocado salsa:

  • 1 large ripe avocados, diced

  • 2 small tomatoes, diced

  • ½  red onion, finely chopped

  • ¼ cup cilantro chopped

  • ¼ cup chopped cilantro

  • 3 tbsp olive oil

  • 2 T Lemon Juice

  • 2 T B&Gerk

Sriracha Lime Sauce:

  • 1 cup mayo

  • 1 T Sriracha

  • 1 T Lime Juice

  • 1 T chopped garlic

  • 1 t B&G

Place the cleaned, deveined, deshelled shrimp ion a bowl with 2 T B&Gerk.  Let it sit while you prep the rest.

Mix all of the Avocado Salsa together in a bowl.

To Build your lettuce wrap, lay pit a large lettuce leaf.  Place some shrimp, followed by the Avocado Salsa and Sriracha Lime Sauce
