Chicken Gyro Bowl

A tasty and very quick Mediterranean dish, a new family favorite!

Ingredients

 For the Chicken Gyro:

  •  2 chicken breasts sliced

  • 2 T garlic olive oil

  • 4 cloves garlic, minced

  • 2 t Italian seasoning

  • 1 t paprika

  • 1/2 t ground cumin

  • Zest and juice of 1 lemon

  • B&G to taste

 

For the Creamy Feta:

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup Greek yogurt

  • 1 small cucumber, grated and excess water squeezed

  • 3 clove garlic, minced

  • 2 T fresh lemon juice

  • 1 t garlic olive oil

  • B&G to taste

 

For the Bowl Base:

  • 2 cups cooked rice, quinoa, or couscous

  • 1 Sliced cucumber

  • 2 cup Cherry tomatoes, halved

  • 1/4 Red onion, thinly sliced

  • Optional Kalamata olives, pitted and sliced

  • 1 T Italian seasoning

  • 2 T Garlic olive oil

 

Instructions

Cook your rice/quinoa/couscous

 In a bowl, mix sliced cucumber, cherry tomatoes, red onion, garlic olive oil, olives, and Italian Seasoning

In a bowl, toss chicken with olive oil, garlic, oregano, paprika, cumin, lemon juice, lemon zest, salt, and pepper.

 Heat a skillet over medium-high heat and cook chicken 6–8 minutes, stirring occasionally, until fully cooked and lightly golden.

In a large container, layer rice, veggie mix, chicken, and top with the cream feta sauce
