Lemon Chicken with Artichokes
I am not sure if it is possible, but there was a suggestion of “More Lemon” in this. It was a nice and light recipie to help use the last of our lemon crop
Ingredients
4 chicken thighs
B&Gerk to taste
1 T Italian seasoning
1 T olive oil
1 lemon, sliced thinly
Juice of 1 lemon
3 T chopped garlic
¼ t red pepper flakes
B&G to taste
1 cup marinated artichoke hearts
1/2 cup halved cherry tomatoes
1/2 cup chicken broth
Preheat oven to 425
Sprinkle B&Gerk on the chicken breasts
Add olive oil, italian seasoning, and red pepper flakes in an oven proof skillet, heat on medium for about 1 min. Sear chick on each side for about 4 minutes a side.
Add garlic, sautee for about 1 minute
Add lemon juice and chicken broth
Place lemon sliced intop of the chicken
Add cheery tomatoes and artichokes to the pan.
Place pan in the oven, for about 20 minutes
