Stuffed Squash Rings

During the fall, when squash harvest exceeds expectations, this is a nice go-to for another way to serve squash.  We did this as a one dish meal.  It took about 1 hour from start to table.

Ingredients

  • Two Acorn Squash

  • ½ lb Italian sausage

  • ½ lb shrimp

  • ½ red pepper chopped

  • ½ green pepper chopped

  • ½ onion chopped

  • 1 cup panko & Parmesan mix

  • 1 cup shredded cheese. 

  • Pine nuts

  • 1 T B&Gerk

  • Italian Seasoning

Pre-heat oven to 350

Marinate shrimp in olive oil and B&Gerk

To make stuffing mix, brown sausage in a large skillet, add shrimp, cook until done.  Add Peppers and onions, mix for about a minute, remove from heat and cover.

Slice squash in ~ 1.5 inch slices.  Clean out seeds. Dip in olive oil and place on parchment paper on a cookie sheet.  Sprinkle Panko &Parmesan on the ring. Add more to the center of the ring.  Add pinenuts to the center.  Add stuffing mix.  Top with shredded cheese.  Sprinkle on Italian seasoning, and optionally, more parmesan.

Cook until the squash is tender, about 30 minutes
