Swordfish in Garlic Butter Wine Sauce

This is very easy and very quick. This is Round II on the recipe, and it will stick for awhile

Garlic Butter Wine

  • Stick of Butter

  • 4 T chopped garlic

  • 1/2 cup chicken broth

  • 1/2 cup white wine

  • 1/4 t cayenne

  • 1 t corn starch

Sword Fish Filets

Place garlic, cayenne, and Butter in a sauce pan on medium heat. When garlic starts to brown, add the remaining ingredients, increase heat to get it simmering and thickening. Once desired thickness is achieved, put the pan on the warming center to keep temp.

Lightly dust the sword fish with B&Gerk. Cook the first side on medium heat, ~ 4 minutes. When you flip the fillets, add the garlic wine sauce and cook an additional ~ 4 minutes.

We served this on an almond rice pilaf. It was wonderful!
